Iga Penyet / Indonesian Beef Ribs
Ingredients :
500gr beef ribs
400ml water
50ml coconut milk
1cm ginger
2bay leaves
3grains of cloves
1tsp tamarind sauce
Salt and sugar to taste (brown sugar or gula melaka)
Sambal Penyet :
8 cloves onions
3cloves garlic
Salt n sugar to taste
10pcs curly red chili
70gr bird's eye chili
1/2 tomato
1tsp shrimp paste
Spice paste :
4cloves garlic
8cloves onion
1cm ginger
3cm galangal
1tsp salt
1cm turmeric
1tbsp coriander
Boiled beef ribs with bay leaves,cloves and ginger about 30minutes. Drained. Marinate the ribs with spices paste. Boil it again include with the water until the ribs tender. Off the 🔥 and let the ribs cool down.
Heat up oil in a wok over medium heat, fry the ribs until light crisps at both side.
Sambal
Sauted onion, garlic, chili, shrimp paste and tomato with a little oil. Remove from the wok and place in mortar. Pound until light ground. Add sugar and to taste and add lime juice or kaffir lime juice
Served with fried tempeh, tofu, basil leaves, cucumber
