Indonesian Beef Ribs with Chilli Sauce (Iga Penyet)

Yes, the overflow sauce is all chilli i.e Sambal - made from fresh chillies, tomatoes....and the key to this dish: Shrimp Paste. You have to add it to make it authentic 💚

Soft caramelised beef ribs, marinated in delicious herbs, mix and smashed with the hot sour sambal sauce - say no more 😍

Recipe:

1 kg beef ribs cut btw the bones

3 cm ginger

2 bay leaves and 2 lime leaves

2 stalks lemongrass 

7 garlic 

3 tbsp olive oil

Spice Paste:

4 garlic

2 cm ginger 

2 cm galangal

1 tsp ground coriander 

Sambal:

8 red chillies 

1 tsp fried shrimp paste

2 tbsp olive oil

1 french shallots 

2 garlic 

2 tomatoes 

2 tbsp shaved palm sugar

2 tsp salt

2 tbsp lime juice

.

Method:

1. Place lemongrass, bay and lime leaves, palm sugar, salt and spice paste and water in a pot. Once boiled, place in the ribs that was cleaned beforehand. Low heat, simmer until meat is tender and herbs are absorbed 

2. Take out ribs and fry it with olive oil until caramelised

3. Fry all Sambal ingredients except for shrimp paste, salt and sugar

4. Once soft, smash and grind Sambal with shrimp paste, add salt and sugar
